Grapefruit, Chamomile and Gin only seems natural to combine together. Well it is, and it’s DELICIOUS! I’m finally sharing my easy Pink Gin and Chamomile cocktail made with the one and only Whitley Neil Pink Gin. This is definitely worth every sip and I’m here to teach you how it’s done.
I have to thank a girlfriend of mine for gifting me with Whitley Neill’s Pink Gin. Their gins have always excited enthusiasts with their many varying flavours and styles. I decided to keep things very simple with this cocktail, by making an easy honey chamomile syrup, and sparkling pink grapefruit that would be perfect for summer. Honey Chamomile Syrup
A simple syrup to create at home, perfect for Spirit Free creations and for this particular Pink Gin and Chamomile Cocktail!
Ingredients
- 1/2 cup Boiled Water
- 1/2 cup Honey
- 1 Chamomile Tea Bag
Instructions
Once your water boils, in a non reactive container, combine water, honey and chamomile. Stir until honey dissolves completely.
Let this come to room temperature before straining. Can be stored in the fridge for up to 2 weeks.
Building your Pink Gin and Chamomile Cocktail
Another key component to this cocktail is the sparkling pink grapefruit. I used Fever-Tree’s new Sparkling Pink creation, which is hard to beat. But I would pick up Pink Ting, or use a refreshing tonic instead. The rest is easy, and this Pink Gin and Chamomile cocktail is built into an easy balloon glass for you. No shakers or fancy tools required. So let’s get to that recipe.
Pink Gin and Chamomile Cocktail
An easy Grapefruit, Gin and Chamomile infused cocktail you'll love to make all summer long!

Ingredients
- 1.5 oz Whitley Neill Pink Gin
- 0.5 oz Honey Chamomile Syrup *See above for details
- 1 oz Grapefruit Juice
- 1.5 oz Pink Grapefruit Soda Fever-Tree used here.
Instructions
Fill your balloon glass with ice and dehydrated grapefruit.
In a shaker, add all your ingredients except soda and a handful of ice. Give this a quick shake.
Strain over fresh ice and top with sparkling Pink Grapefruit
