We’re giving some of the classic Y2K Cocktails a cocktail lift! Featured on Breakfast Television, we give a cocktail revamp to the Cosmopolitan, Long Island Iced Tea, Surfer on Acid and Appletini. These cocktails are restructured to the new generation, some offering lower-in-alcohol options, fresher ingredients and using items you would actually carry on your bar. Let’s begin!

Appletini
When it comes to the classic Appletini, Sourpuss is just something I won’t have on my bar. Too artificial, and doesn’t lean towards the fresh, clean ingredients I prefer to use in my cocktails. In addition, I opt out of the Vodka and substitute a SOJU APPLE! I did this for a number of reasons, wanting to highlight more unique spirits, tasty substitutions, PLUS, it makes this cocktail lower-in-alcohol. All of these reasons, and the cocktail still packs a flavourful punch that you’ll love. A perfect revamp to some classic Y2K Cocktails.
Products Used: Chum Churum Apple Soju & Ardiel’s Dry Apple Cider
Soju Appletini
This Lower-in-Alcohol Appletini is the perfect revamp to the classic Appletini recipe using Soju and a Local Dry Apple Cider.
– Difficulty: Intermediate
Ingredients
- 2 oz Chum Churum Apple Soju
- ¾ oz Lime
- ¾ oz Simple Syrup 1:1
- ¾ Dry Apple Cider
- Dehydrated Apple Slice optional for Garnish
Instructions
- Shake first three ingredients into a shaker filled with ice.
- Shake Well and strain into your Coupe or Martini Glass.
- Top with Cider.
Sunshine Surfer (Revamp of the Surfer on Acid)
When it came to renovating this classic cocktail, I decided to use ingredients that I would most likely have on my bar. For instance, the Coconut Rum Liqueur that’s in the classic recipe, is something that can be hard to find that is of GOOD quality (at least here in Ontario). That’s why I deconstruct the whole thing to use a rum I love, coconut milk (which the leftovers can then be used in your favourite dishes), and Amaro Montenegro instead of Jager. Of course, this cocktail needs the tropical influence which comes through with the additional Pineapple and Lime Juice flavours. Most importantly, aim for a quality Spanish-Style Rum like the Flor de Cana featured here (a brand all about sustainability and ethical practices).
Products Used: Flor de Cana 12 Yr & Amaro Montenegro
Sunshine Surfer
The classic Surfer on Acid cocktail is revamped into this Rum, Coconut and Amaro mix that is a MUST MIX.
– Difficulty: Intermediate
Ingredients
- 1 oz Flor de Cana 12 Yr
- ¾ oz Amaro Montenegro
- ½ oz Coconut Milk
- 1/3 oz Simple Syrup
- ¾ oz Pineapple Juice
- ¼ oz Lime juice
Instructions
- In a shaker filled with ice, add in all your ingredients. Shake well and strain over ice.
Long Island Iced Tea 2.024
Oh the Long Island Iced Tea. I like to think that this cocktail was a mistake Jungle Juice that didn’t go away. It’s a Y2K cocktail that people loved, but definitely needs a revamp. So I decided to use ingredients and ratios that were a lot more purposeful, PLUS this recipe actually uses real steeped Tea!
Products Used: Hayman’s London Dry Gin, Hayman’s Sloe Gin, Sailor Jerry Spiced Rum & Cocchi Vermouth di Torino
Long Island Iced Tea 2.024
A more purposely approach to the classic Jungle Juice that is the Long Island Iced Tea. Note: a great cocktail to batch!
– Difficulty: Easy
Ingredients
- ¾ oz Dry Gin
- ½ oz Sloe Gin
- ¾ oz Sweet Vermouth
- ½ oz Spiced Rum
- 2 oz Steeped English Breakfast Tea
- 1/3 – 2/3 oz Simple Syrup 1:1
- 1 Lemon Wedge
Instructions
- Fill your glass with ice and add in your spirits first.
- Top with Tea, squeeze your lemon and add in your sugar component (Simple Syrup) to adjust the cocktail to the sweetness of your liking. Stir to incorporate and enjoy!
The Ultimate Cosmopolitan
Would we even know about the Cosmo if we didn’t have Sex and the City? Listen, the classic is actually good and quite balanced. Problem is, there are so many variations out there, that what is best? I share my Ultimate Cosmopolitan Cocktail combo, and hope you love it too.
Products Used: Dillon’s Vodka & Cointreau
The Ultimate Cosmopolitan
I share my perfect Cosmopolitan recipe that I would proudly shake up anyday.
– Difficulty: Intermediate
Ingredients
- 1.25 oz Dillon’s Vodka
- 1 oz Fresh Cranberry Juice
- ¼ oz Orange Juice
- 1 tsp Granulated Sugar
- 1 Orange Peel
- 2/3 oz Cointreau
Instructions
- In a shaker, add in your Orange Peel, Sugar and Orange Juice. Stir until Sugar starts to dissolve.
- Add the rest of the ingredients, fill with ice and give this a vigorous shake. The longer the better. Double Strain.
