Call it a syrup or not, but today I’m giving you a recipe for a delicious strawberry reduction that’s beautifully paired with black pepper. Fall in love with Spring once more!
This is a very simple reduction to create, just ensure you have fresh ingredients and time. This needed to reduce for a minimum of 20 minutes to get it where I wanted, but it was worth every moment. It’s first initially created for the Strawberry Black Pepper Gin Sour, but you can use this many different ways. Mix it up in your water or soda for that extra added flavour, have it on top of pancakes, or even mix up another cocktail. Whatever you do, let me know by commenting below!
Strawberry Black Pepper Reduction
A delicious Reduction initially used for a Spring-inspired Gin Sour, but you can use this for your non-alcoholic beverages, on top of pancakes and so much more!

Ingredients
- 2 cups Strawberries Stems Removed
- 1 tbsp Freshly Cracked Black Pepper
- 1/2 cup Water
- 2/3 cup Granulated Sugar
Instructions
In a small saucer, stir in all ingredients until it reaches a boil
Once it boils, reduce it down to simmer and let this simmer for a minimum of 20 minutes. You don’t want it too runny.
Once it reaches the desired consistency, strain through a fine mesh strainer and into sterile container. Let it reach room temperature before placing in the fridge.
Can last a minimum of 2 weeks.
