This reduction is pretty much a mulled wine recipe…but not. I would never put this much sugar in a mulled wine recipe, so just deal with it, because it’s delicious and the perfect addition to my Game of Throne’s inspired Cocktail called A Drink of Ice and Fire!
Spiced Red Wine Reduction
Inspired by the finale for Game of Thrones, this reduction is used as the fire and blood component of the cocktail, but it can be used in a number of ways!

Ingredients
- 1.5 cups Red Wine Malbec or Cab Sauv works well here
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 2 Cinnamon Sticks
- 1 tsp Freshly grated nutmeg
- 2 Star Anise
- 1 pinch Paprika
- 1 pinch Salt
- 1 peel of Whole Lemon
Instructions
In a medium sized saucer, add all ingredients to a pot and let it come to a boil
Once it boils, reduce the temperature down to a simmer for 15 minutes (let it reduce by at least 1 third)
Strain out solids and let it come to room temperature before using. Can stay in the fridge for 2 weeks.
Recipe Notes
You don’t have to go very fancy when it comes to what red wine you use. Just make sure there’s a ton of tannins, and it’s NOT too sweet. I’ve put in enough to make it work, so if you find the wine you are using is sweet already, reduce the sugar used.
