I’ll always push my love of cocktails and inspiring home bartending, but the truth is, I will rarely drink during the week, so I look forward to my fresh juices and blends. You would think by now that I would invest in a juicer, but most Toronto condos don’t offer that luxury of counter space. I’m glad that hasn’t stopped me, because this blend of blueberry and beets has quickly become one of my favourite creations, with or without alcohol!
I had wanted to combine beets and blueberries for some time now, but nothing good (by that I mean beets) was coming out of the local markets. Thankfully that changed this week, and I was able to whip up this amazing juice! It ended up pairing with one of my cocktails I’ll be featuring later this month, and the beets were highlighted beautifully!
I combined this juice with a honey crisp apple, greek yogurt, honey, fresh citrus and pomegranate juice! So in essence it’s a blueberry and beet smoothie, which normally I keep the dairy out, but it’s an essential here. Believe me, this is a game changer and will have you craving more of these mocktail mondays.
Clear spirits are a natural pairing if you wanted to make this into a quick cocktail. I would even pair some Rums with this juice, and top it off with a bit of carbonated water or tonic. I’d keep things light and fresh with this combination, and throw in some fresh mint for your next creation!
Blueberry and Beet Smoothie
A delicious juice recipe that you can enjoy on its own or paired with an alcohol.
Difficulty: Easy
Ingredients
- 2 cups Fresh Blueberries
- 1/2 cup Greek Yogurt
- 2 large Beets Roasted and Peeled
- 1 tbsp Honey
- 1 Honey Crisp Apple
- 1/2 Lemon Juiced
- 1/2 cup Pomegranate Juice
Instructions
In a blender, combine all ingredients and blend for approximately 1 minute
Strain through a fine mesh strainer, discarding remains and keep this refrigerated for a maximum of 1 week.
