I’m quickly becoming obsessed with Shrubs, and I couldn’t think of a better fruit then PEACHES to introduce Shrubs into your life! With a delicious blend of Peach, Raisin and Cinnamon, you’ll soon be racing to the kitchen to infuse some more!
I won’t go into too much detail about Shrubs, because you will want to read my article titled ‘What the Shrub’, which will be dropping by the end of the week! But in short, it’s a vinegar-based infusion, combining citrus and sugar. There are a couple ways that Shrubs can be made, and for this recipe, I use the Cold Process Method. This involves leaving the peaches to macerate for 2 days, and then infusing with vinegar. Now let me warn you, it takes time. I know that’s not what you want to hear, even my impatient self grunts at the thought, but the reality is that time is your best friend in Shrub making. There is a Hot Process method that speeds up the entire process to 1 hour, but to truly highlight the vibrant, bright flavours of fruits, the Cold Process is the better route.
Peach, Raisin and Cinnamon Shrub
A harmonious blend of peach, raisin and cinnamon to create a delicious Shrub!
Difficulty: Easy
Ingredients
- 5 Peaches Cored and roughly chopped
- 1 cup Raisin Roughly chopped
- 1 cup Brown Sugar
- 1.5 tsp Cinnamon Powder
- 1 cup Apple Cider Vinegar
Instructions
- In a non-reactive container, mash the peaches and raisins until completely broken down
Mix in the sugar and cinnamon and leave it in the fridge, covered in plastic wrap for 2 days (Make sure to stir the contents once a day)
After the maceration, strain the contents through a fine mesh strainer into a mason jar.
Pour the vinegar through the fine mesh strainer to get as much sugar that is attached to the fruit as possible. Discard the remains or keep for personal use.
Let this infuse with the vinegar in the fridge for a week before usage. Make sure to give it a shake each day.
