Think a Mint Julep, but so much brighter with this amazing infusion of Sherry, Mint and Sheringham Seaside Gin! This is not a recipe you want to sleep on, because it will become a favourite this Spring / Summer.
Working with Sheringham Gin
If you haven’t had a chance to taste the lineup from Sheringham Gin out in Vancouver Island, just stop, head to a store, or shop online because they are a must. They’re a brand I’ve recently fallen for, for their quality and ideologies when it comes to craft cocktails.
Now what I love about this Gin is how versatile it truly is. It can stand on its own and sip well, while holding strong in a Martini. But it’s the delicious floral notes and balance of Juniper that I love mixing in a cocktail. The Gin is also heavily influenced by the Vancouver Island Coast and incorporates an interesting infusion of Wilted Kelp. A delicious Sip if you ask me, and worth seeking out.
Building this Minty Summer Gin Cocktail
With all the tasting notes I mentioned above over the Sheringham Seaside Gin, what made me come to the decision to this Minty Summer Gin Cocktail? I decided I wanted to let the spirit shine. But not as a Martini, because that’s simple. I wanted something that was bright and perfect for Summer, that would also allow the Gin to take the star of the show.
So think Julep, but instead of Bourbon, we’re brightening this up with Sheringham. I also added an Amontillado Dry Sherry for depth and acidity, while you obviously need some sugar to balance everything out.
Lastly, and probably the most important note, MAKE SURE YOU USE CRUSHED ICE. This is essential to making this cocktail just right. So grab a hammer or simply use the crushed ice option on your fridge.
Ginny
A Bright Gin and Herbaceous cocktail mixed with Sheringham Seaside Gin, Sherry, Mint and Honey over some Crushed ice.
– Difficulty: Intermediate
Ingredients
- 2 oz Sheringham Seaside Gin
- 1 oz Dry Sherry
- 0.75 oz Honey Syrup (1:1)
- 10 Mint Leaves + 2 Sprigs for Garnish
Instructions
Gently Slap Mint and place into a Hurricane or Pilsner Glass.
Add in your Gin, Sherry and Syrup, fill 3/4 of the glass with Crushed Ice and stir.
Once combined, top with more crushed ice and garnish with remaining 2 sprigs of Mint.
